Condition and description: Good condition, although this is an obviously used cookbook. The dust jacket has some wear, there are a couple of dog eared pages and some warping to the bottom right corners of some of the pages towards the back. This is visible in the fourth image. It looks like there may have been a water spill, however, it does not detract. The binding is tight and pages are clean. Small spot on flyleaf. A very usable cookbook
Danella Carter's "New Soul" kitchen replaces salt pork, bacon grease, and lard with smoked turkey, fresh herbs, pepper bases, and ginger, lemon peel, and spices. In doing so, she lowers the fat, sugar, and salt content of popular soul food recipes.
There is an emphasis in this cookbook on recipes that are already low fat, and low on red meat and pork. Recipes include Country Chicken with Cornmeal Waffles; Onion Pie; A Mess'o Greens; Buttermilk Soup with Cornbread Croutons; Pan Roasted Quail with Oyster Bread Pudding; Herbed Codfish Cakes; Pumpkin Grits; Coconut Pie; and Raspberry Cobbler.
